Dear, because the plugin use default availability text of WooCommerce. So, if you want custom it, you need custom via use WooCommerce hook. please add custom code to file functions.php of your theme to do it.

    if(!empty($availability)){
        return $availability;
    }
    return 'In stock';
});

Dear, I don’t understand your problem, because if you want use German you need load German languages for WooCommerce. The WooCommerce translate not work on your site ?

Dear, default the WooCommerce only display ‘Out of stock’ and ‘Available on backorder’ and If you enable ‘Enable stock management at product level’ for product. It will display ‘In stock’
