There is an issue with the theme and the woocommerce checkout and customers cannot click between the different shipping options available. The only shipping option available to them on checkout is the default one.
If they try and choose a different option, they are unable to click on it. I have trouble shooted the website by installing the Health Check & TroubleShooting plugin.
Once I had disabled the theme and plugins, and reverted to the 2023 wordpress theme, there was no problem with the shipping options. But when I enabled your theme with no plugins, the problem was there again.
I am running WordPress 6.2.2 and WooCommerce 7.7.0. For now I have had to disable the shippings options and only leave one option for customers. However, this is going to cause a problem as customers want to use the store collect option.
