Edit product thumbnail features

Hi there, just a couple quick questions about the product preview page.

1) When you click on a product category and it lists all the products, how can I change the small quick view + symbol so that it reads ‘Quick Buy’ and stays there permanently without a hover over so that people can add straight to the basket?

The reason I need this is that I want to change the ‘Select Options’ bit at the bottom to read ‘Start Designing’ to then go into the product page.

2) My other question was if I have already started editing the theme without creating a child theme, how can I ensure I’ve copied all the customised elements over to the child theme so that they are not erased during any updates? And with mods such as ones that aren’t on the root of the theme, like those in the /woocommerce folder, how do I map those from the child theme?
